What Is Dum-Style Biryani?

“Dum” refers to the slow steam-cooking technique where marinated meat and half-cooked rice are layered in a sealed pot. As the dish cooks over low heat, the flavours of the meat, spices, and rice infuse together, creating an aromatic and moist biryani.

This technique originated in the Mughal courts and was refined in Awadhi cuisine to highlight fragrance, elegance, and subtlety.

The Awadhi Biryani Legacy

Unlike its spicy Hyderabadi cousin, Awadhi biryani focuses on balance. It doesn’t shout; it sings. It uses:

  • Saffron-soaked milk for colour and aroma
